The most famous nutritional advice is “Eat more fruits and vegetables” if you want to be healthy and fit. But even if you love salads, the washing, peeling and preparing can be quite boring. But then again the good news is that sometimes you should skip the peeling if you want to keep the nutrients and better taste. The nutritionist Katie Cavuto, R.D. from Philadelphia has prepared a list of foods you shouldn’t peel.
- Potatoes
Usually we peel the potatoes when we prepare, potato salad, mashed potatoes or when we boil the potatoes. Completely wrong! 20 % of the nutrients like trace minerals and B vitamins are found in the peel as well as the fiber- claims Cavuto. You just need to wash the potato well until it is completely clean.
- Eggplant
The peel of this plump is rich in phytonutrient called nasunin, a powerful antioxidant which helps in regenerating cells which are damaged due to aging or some disease.
- Sweet Potatoes
Their peel contains a lot of nutrients- says Cavuto. It is rich in potassium, vitamin C and beta carotene.
- Cucumber
Cavuto claims that cucumber’s peel is rough but it contains a lot of fiber and immune-boosting antioxidants which prevent constipation and supports GI health.
- Carrots
They need to be washed well as they are grown-in-the-earth veggies and they can be used with their outer layer. All the antioxidants are found in or directly under the skin.
- Parsnips
They are also known as white carrots but they are less sweet with a winter-spice flavor. But they contain a lot of nutrients just under the skin. So do not peel them.
- Apples
Most of the people peel the apples because they have problems with digestion. But that means they are rich in fiber which actually improves digestion. Cavuto says-“Apple skin is rich in quercitin, vitamin C, and triterpenoids, which are cancer fighters,”
