Almond cake – recipes

Almond cake is a delicacy that will win you over with its irresistible taste and aroma.

Below we present you two recipes to make this cake yourself.

Almond cake - recipes

Recipe 1 (Chocolate Almond Cake)

Ingredients:

Peels:

10 egg whites

20 spoons of sugar

10 spoons of fried ground almonds

3 tablespoons of breadcrumbs

1 tablespoon of vinegar

Phil I:

150 g of fried ground almonds

200 g of chocolate

250 g of powdered sugar

500 g of margarine

700 ml of milk

30 egg yolks

20 spoons of sugar

3 spoons of density

2 spoons of flour

1 bag of vanilla pudding

Phil II:

150 g of fried ground almonds

200 g of Euroblock chocolate

500 ml of sweet cream

Ganache cream:

300 g of chocolate

300 ml of sweet cream

Way of preparation:

Peels: First, beat the egg whites, then add sugar, vinegar and beat with a mixer. After that, add breadcrumbs and almonds and mix with a blender. Pour the mixture you got into a pan that you have greased and sprinkled with flour. Bake the crusts at a temperature of 220 degrees, and you can make three crusts from the resulting mixture.

Phil I: To make the first filling, beat the egg yolks with sugar, then add the thickening, pudding powder, flour and 1 dl of milk. Mix everything and cook in 6 dl of milk. Leave the filling to cool. During this time, beat the margarine with powdered sugar, so that a foamy mixture is obtained, and mix it with the filling that has cooled down. Add almonds and melted chocolate.

Phil II: Whip the sweet cream, then add the almonds and the grated euroblock chocolate.

Ganache Cream: Heat the sweet cream until boiling, then add the chocolate and stir until the chocolate melts. Allow the mixture to cool.

First, spread half of the first filling on the crust, and half of the second filling on top of that. Then, put the second crust, and spread the first filling on it again (leave 2-3 spoons of filling for the third crust as well), then the second filling. Place the third crust and spread 2-3 tablespoons of the first filling over it. When you have filled the whole cake, put the ganache cream that has cooled down and sprinkle the cake with chopped almonds or hazelnuts.

Recipe 2 (Cake with almonds and caramel)

Ingredients:

Peels:

6 egg whites

300 g of sugar

1 tablespoon of vinegar

½ teaspoon vanilla flavoring

Pinch of salt

Caramel filling:

50 g of sugar

50 g of butter

1 teaspoon of honey

½ teaspoon vanilla flavoring

120 ml of sweet cream

Pinch of salt

Almond filling:

2 dl of milk

2 spoons of sugar

6 egg yolks

1/2 spoonful of stock

150 g ground almonds

150 g of butter

2 tablespoons of powdered sugar

Sweet cream filling:

500 ml of sweet cream

1 spoon of powdered sugar

1 teaspoon of vanilla flavoring

Way of preparation:

Peels: Beat the egg whites with a little salt, then add a little sugar and vanilla, but do not stop mixing. You can make two crusts from the resulting solid mixture.

Caramel filling: First melt the sugar, then add the butter, vanilla and about 60 ml of sweet cream. Mix on low heat for about 5 minutes, then add the rest of the sweet cream and gently mix for a few more minutes, until you get a smooth mixture.

Almond filling: Soak the almonds in boiling water, then drain, dry and grind them, then boil the milk. In a separate bowl, beat the egg yolks with two spoons of sugar, add the thickening, a little hot milk and mix everything. Pour the mixture into a bowl with milk and cook over low heat, stirring constantly. When the mass thickens, remove it from the stove and let it cool. Beat butter with powdered sugar, add ground almonds and cooled yellow filling and mix everything.

Sweet cream filling: Whip the sweet cream, add vanilla and sugar and mix everything.

Spread half of the almond filling and half of the sweet cream filling on the first crust, then place the second crust and spread with the rest of the almond filling and the remaining sweet cream filling. Then, cover the cake with caramel filling and sprinkle toasted almond leaves and grated chocolate on top.
