Ingredients:
5 liters of fatter milk
1 cup of vinegar or 2 tablespoons of essence
1 teaspoon of salt
Way of preparation:
Boil the milk first, and when it boils, remove it from the stove. Next, add salt and one cup of vinegar or 2 tablespoons of essence. Mix everything well and cook for about 2 minutes. The next step is to put cheesecloth in a colander and strain out the curdled milk. Tighten the ends of the cheesecloth so that the cheese is completely drained, and then put the resulting cheese in dry cheesecloth and place it in a drafty place to dry.
Recipe 2
Ingredients:
6 liters of milk
2 tablespoons of salt
3 tablespoons of essence
1 tablespoon of vegeta
1 parsley leaf, finely chopped
1 teaspoon of oregano
3-4 cloves of crushed garlic
Way of preparation:
First, boil 6 liters of milk with 2 tablespoons of salt and let it boil for about 10 minutes, then remove from the stove. Add 3 tablespoons of essence to the hot milk and cook for another 5 minutes, stirring constantly. If you like aromatic flavors, add vegetables, parsley leaves, oregano and garlic to the milk. Line the pan with cheesecloth and pour hot milk over the cheesecloth, then cover the cheesecloth with some heavy object. Let it stand like that until the milk cools down, and then put the cheese on a plate and keep it in the refrigerator. On the first day, turn the cheese on one side and on the second day on the other, so that it dries completely.
Recipe 3
Ingredients:
5 liters of milk
1 bag of lemongrass dissolved in water
1 spoon of salt
Way of preparation:
Put 1 tablespoon of salt in the milk and bring it to a boil, then add a bag of lemongrass. When the milk thickens, prepare the cheesecloth and strainer. Pour the cooked mass into cheesecloth and press from above with a board, so that all the whey comes out. When the cheese is drained, put it in a cool place or in a draft. You will notice in a couple of days that the cheese has started to turn yellow, like real cheese.
Recipe for rolled cheese
Ingredients:
8 slices of toasted cheese
8 pieces of processed cheese
8 slices of toasted ham
1 sour cream
1 spoon of hot ajvar
1 spoon of chili
1 spoon of black onion
200 g of sheep’s cheese
50 g of butter
2 cloves of garlic
Way of preparation:
First, mix melted cheese, butter, ajvar and chili in a large bowl, and in another bowl, mix mashed sheep’s cheese, chopped garlic and onion and sour cream. Next, prepare the aluminum foil. Arrange slices of ham on it and spread them with ajvar filling, then roll them up. Then, arrange the cheese on the foil, put the mixture you made from the sour cream on it, and put the rolled ham on top of it. Twist everything together in the form of a roll and leave it to cool in the refrigerator. After a few hours, you can serve your rolled cheese, which can be an ideal appetizer for any occasion. It is recommended to drink a glass of white wine with the rolled cheese.
