Believe it or not, the trend of eating raw food, which is gaining popularity all over the world, offers more and more opportunities to prepare a variety of meals from fresh ingredients, and also an increasing number of recipes for preparing delicious treats. For all lovers of sweets, as well as supporters of healthy eating, here are some interesting recipes for raw, unbaked cakes.

Apart from being healthy and in line with the trends of healthy habits, wellness culture and turning to nature in all aspects of human life, raw cakes that are not baked are also very easy to prepare. It often happens that we have to prepare some fine treats for guests or a special occasion in a hurry, and we don’t have time to spend a long time in the kitchen preparing dishes and sweets that require multiple processing methods. Raw, unbaked cakes are also convenient for people who normally do not practice exclusively the consumption of fresh and unprocessed food, although they can certainly inspire them to some new eating habits, once they try them.

Raw food and treats can be very tasty and represent a whole new approach to nutrition and lifestyle. It may not sound like that at first, but raw cakes actually delight with their taste, rich aromas and additions. Fruit, chocolate, more or less sweet, creamy and layered, raw cakes are a real refreshment on our menu. In a culture that is used to the fact that the quality of cakes and cookies is mainly based on complicated and long-term preparation and a lot of ingredients that are not so beneficial for our body, this new way to prepare cakes will certainly be a pleasant surprise.

Raw Blueberry Cheesecake Cake – Cheesecake cake is one of the world’s favorite sweets, and there are almost recipes for variants in accordance with the basics of the increasingly common raw food diet. Creamy and very rich in taste, this is an exceptional, all-natural and healthy version of the popular cheesecake. For preparation you need:

The bark

  • 2 cups raw walnuts
  • 1 cup dates or raisins
  • Pinch of salt

Cream

  • 3 cups cashews
  • ¾ cup freshly squeezed orange juice
  • Peel from squeezed oranges
  • ½ cup agave or maple syrup
  • ½ cup melted coconut oil
  • Juice of one lemon
  • 2 cups fresh or frozen blueberries

First, prepare a crust made of walnuts and dried fruits, dates or raisins. Grind them in a blender until the nuts are completely crushed, and the mixture becomes sufficiently consistent. Apply the mixture as a base in the desired cake mold and put it in the refrigerator. Then prepare the first layer with the orange, by mixing cashews, orange juice, maple syrup, coconut oil, lemon juice and a pinch of salt in a blender, so that a completely smooth mass is obtained. Add grated orange peel to it. Separate a quarter of the mixture for the last layer, and pour the rest over the crust and put it in the freezer. For the last layer, blend the blueberries and the rest of the mixture with the orange, until a creamy texture with pieces of blueberry. Apply as the last layer and keep the cake overnight in the freezer or refrigerator. Decorate as desired with orange slices or fresh blueberries.

Raw cream chocolate cake – The raw food repertoire also brings its own version for a nice creamy chocolate cake. Devotees of the wellness lifestyle and the increasingly popular raw food diet can enjoy the perfect chocolate taste and sumptuous aroma of this cake. For preparation you need:

The bark

  • 5 cups raw almonds
  • ½ cup pitted dates
  • 2 tablespoons of melted coconut oil
  • 4 teaspoons of raw cocoa
  • Pinch of salt
  • 4 teaspoons of water

Cream

  • 25 dg of raw cashew nuts
  • 2 teaspoons of vanilla extract
  • 120 ml of honey
  • 120 ml of water
  • 120 ml of melted coconut oil
  • 6 spoons of raw cocoa

Leave the almonds and cashews to soak overnight in water. Prepare a mold with baking paper as a base. First, chop the almonds in a food processor, then add dates and a little water, coconut oil and salt and mix together, then add cocoa. Mix everything a little more to get a sticky mass. This layer is applied to the mold as a base for the cake and placed in the refrigerator. The cream is prepared by mixing and blending all the ingredients except coconut oil and cocoa so that everything is finely chopped. Add coconut oil and cocoa and mix until completely smooth cream. Pour the finished mixture over the base and put everything together in the refrigerator, at least five hours before serving. Decorate the cake as desired, say with ground almonds or with a little cocoa.

Raw carrot cake with Brazil nut dressing – Carrot cake, rich in exceptional natural ingredients, is a real refreshing dessert for any occasion. It goes well with tea and enchants with an interesting combination of natural ingredients. Raw carrot cake with cashew frosting will delight any guest and delight the household. Here’s how to prepare this raw cuisine delicacy:

The basis

  • 7 medium carrots
  • 5 cups Brazil nuts
  • ½ cup of flaxseed
  • 1 cup of honey
  • 1 cup of coconut flour
  • 1 small raisin
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon

Frosting

  • 1 cup of honey
  • 1 cup Brazil nuts
  • 2 cups of lemon juice
  • 1 teaspoon of vanilla extract

Flax seeds should be soaked overnight. Grate the carrots, and blend the Brazil nuts and flax seeds in a blender separately. Also mix raisins, coconut, cinnamon, honey and vanilla extract separately until a homogeneous mass is obtained. Add ground Brazil nuts and flax, then mix a little more. Pour the mixture into the prepared mold with parchment paper, then put it in the refrigerator to harden. Make the glaze by mixing all the ingredients in a blender to get a completely creamy texture. Remove the finished cake from the mold and cover it with the prepared topping. Decorate as desired, for example with pieces of Brazil nut.
