Torta Reforma is one of the most famous in our region. First of all, because of its fine taste, and then because it is easy to prepare.
Today, when most housewives are in a race against time, there is little time left for the kitchen, so some quick recipes are useful. Both for main courses and desserts.
Reforma cake is certainly a quick, but very generous and, above all, delicious dessert, which many people love precisely because of its rich taste.
You can make it in several versions, ie with different ingredients. The most famous reform is the cake with walnuts, and then with hazelnuts. There is a version with coconut, but also a lean version. You can always invent your own, by adapting our recipes to your taste.
Whichever version you choose, you won’t go wrong, because the cake reformation is delicious in every way. In addition, it is decorative, and you can serve it during a celebration when you want your table to look beautiful. Of course, the most important thing is taste, and since the reform has both appearance and taste, it is certainly the right choice.
It is best, of course, that you judge it yourself. In the text below, read a couple of recipes that we have set aside for you, and choose the one that seems tastiest to you, and try it. Basic recipe
According to the basic recipe, torta reforma is prepared with walnuts. With a lot of walnuts, so their taste is felt really well. So, if you are a fan of walnuts, this cake will surely become your favorite!
The ingredients you will need to prepare are:
For crusts
10 egg whites 300 grams of sugar 1 vanilla sugar 300 grams of ground walnuts 2 tablespoons of flour
For filling
10 egg yolks 180 grams of sugar 1 vanilla sugar 50 grams of chocolate 250 grams of margarine
Preparation procedure:
From the listed ingredients for the crusts, you need to make two equal crusts, or one larger one, which you will then cut into two equal parts. Do whatever is easier for you, and we recommend baking two crusts separately.
So, beat 5 egg whites into snow. When the egg whites become firmer, gradually add sugar and vanilla sugar to them, then continue beating until the sugar dissolves and the egg whites turn into snow. They need to be so firm that when you turn the vanglica they don’t move. Add 150 grams of ground walnuts to the beaten egg whites, mix, then add 2 tablespoons of flour.
Mix everything again, but slowly, with the help of a spoon, so that the mixture remains foamy. If the egg whites sag, then the crust will be thinner and not very tasty. Therefore, mix everything with light movements, then pour the resulting mixture into a suitable baking tray and bake at 200 degrees.
The crust bakes quickly, so check the progress with a toothpick after 15 minutes. If it is ready, take it out to cool, and prepare and bake the second crust in the same way. When you have prepared the crusts, leave them to cool while you prepare the filling.
Beat the eggs with sugar and vanilla sugar, using a wire or a fork, then put them to steam. While stirring, cook the egg yolks until they become nicely creamy, which will take approximately 15 minutes. When you notice that they have thickened nicely and are creamy, add the chocolate to them, then remove from the heat.
Stir to combine the ingredients, then leave the filling to cool well now. Only add margarine to the well-cooled filling, and with the help of a mixer, beat the filling well, so that it becomes creamy and uniform.
Now fill the crust with the finished filling, so you can cover the entire cake with the filling. Decorate additionally with whipped cream or to taste, perhaps with melted chocolate, and then sprinkle generously with walnuts. Place the finished cake in the fridge to set well before serving.
Lent reform cake
The lean version of the cake also includes nuts, but instead of eggs and milk, we use some lean ingredients like honey and lean chocolate. It is just as tasty, so you don’t have to make it only on fasting days, but when you want a slightly different treat, without the standard filling.
The ingredients you will need to prepare are:
For crusts
230 grams of ground walnuts 230 grams of sugar 230 grams of honey 200 milliliters of sour water 50 grams of lean chocolate 2 bags of vanilla sugar 150 milliliters of oil 300 grams of flour 1 bag of baking powder
For filling
450 grams of sugar 150 milliliters of hot water 450 grams of ground walnuts 50 grams of lean chocolate 250 grams of margarine 2 bags of vanilla sugar
Preparation procedure:
In a suitable container, combine all the above ingredients for the crusts, and with the help of a mixer or whisk, beat the mixture well. The mixture needs to be compact, i.e. uniform and of medium density. Pour the resulting mixture into a lined tray or mold, then bake at 200 degrees.
After about 15 minutes, check how the crust is progressing with a toothpick. If you pull out a clean toothpick, the crust is ready and then take it out. Leave it to cool, and then divide it into three equal parts, or peels, with the help of a thread or a knife.
Leave the crusts to cool further, while you prepare the filling during that time.
Beat margarine with vanilla sugar until foamy and set aside. Mix water and sugar in a suitable saucepan and bring to a boil. When it boils, continue to cook until the sugar dissolves, then remove from the heat and immediately add the chocolate. Stir to combine.
Beat the margarine until foamy, then add the prepared filling to it, and beat everything together with a mixer until everything is well combined and the mixture becomes creamy. It may seem runny to you, but let it cool a bit and it will be just right.
Fill the crusts with the obtained filling, then decorate the cake according to your taste, with melted chocolate or whipped cream. Leave it in the freezer for a couple of hours so that it hardens and the skins soften, then serve.
Hazelnut cake reform
Well, if you are not a fan of walnuts, you can also prepare the reform cake with hazelnuts. They are also an excellent ingredient for all cakes, and in combination with chocolate they are a hit. We recommend that you try this recipe at the first opportunity!
The ingredients you will need to prepare are:
For crusts
24 egg whites 40 spoons of sugar 400 grams of ground hazelnuts 8 spoons of wheat flour 8 spoons of breadcrumbs
For filling
24 egg yolks 2 whole eggs 30 spoons of sugar 400 grams of chocolate 500 grams of margarine 150 grams of ground hazelnuts
Preparation procedure:
You will prepare 4 equal crusts from the listed ingredients. Since there are four crusts, we recommend that you prepare them all separately, rather than one large one – you will need a huge baking sheet.
So, for the first crust, beat 6 egg whites until stiff, gradually adding 10 tablespoons of sugar. When the egg whites are well beaten, add 100 grams of ground hazelnuts (coarsely ground), then 2 spoons of flour and 2 spoons of breadcrumbs. Now mix everything with a spoon, with gentle movements, so that the mixture is combined but so that the egg whites do not subside.
Then pour the resulting mixture onto a suitable tray, preferably 38×26 cm in diameter, and bake the crust at 180 degrees. It is baked for about 20 minutes, and you check after that time to see if it is ready. If it is, take it out to cool, and you prepare the other 3 crusts, using the same procedure.
When you are done with the crusts, leave them to cool while you slowly prepare the filling. Mix egg yolks with sugar, then steam them. They need to be creamy, and stir non-stop in order to cover them evenly. At the end, add the chocolate, stir to combine everything, then remove from the steam.
Now wait for the filling to cool, then add margarine to it and mix, so that the mixture becomes foamy and smooth. Now file the crust with it, then decorate the cake according to your taste.
Place the cake in the refrigerator to harden and soften before serving. You can leave it overnight.
Coconut cake reform
A completely different reform cake, made with coconut flour. This is the modern version, as coconut was once not used as often, or at all. Reforma cake is actually an “old-fashioned” cake, known since ancient times. Our grandmothers often prepared it, precisely because it is made from basic ingredients, which we almost always have at home. However, it is worth trying something new – different.
The ingredients you will need to prepare are:
For crusts
300 grams of coconut flour 15 egg whites 15 spoons of sugar
For filling
15 egg yolks 5 spoons of sugar 200 grams of chocolate 375 grams of butter 250 grams of powdered sugar
Preparation procedure:
Beat the egg whites into solid snow, then gradually add the sugar and continue to beat until the sugar dissolves. It is necessary that the egg whites are very firm. Then add coconut flour to them, and mix with a spoon to combine. Slowly, so as not to save the egg white.
Pour the resulting mixture onto a lined mold or tray, then bake at 180 degrees for about 15 minutes, more or less depending on your oven. Let the rind still remain white. Take it out to cool, then cut it into three equal parts. *If it’s easier for you, bake three separate crusts. They are delicate and break easily, so be careful when cutting them or removing them from the pan.
While the crusts are cooling, prepare the filling. Beat egg yolks with sugar, then steam. Stir non-stop so that the cream is covered evenly. When it becomes thick and creamy, add the chocolate and continue to mix until combined. Remove the pan from the heat and let the filling cool.
During this time, beat the butter with powdered sugar, then add it to the cooled filling, and now beat everything together with a mixer, so that you get a creamy filling.
Now that everything is ready, file the crusts, and additionally decorate the cake with whipped cream, melted chocolate or according to your taste. Leave it in the refrigerator for a few hours to set, then cut and serve.
Flourless cake reform
Here is a recipe for those who do not use white wheat flour for some reason – because of what, or what contains gluten. In that case, you don’t have to give up the delicious treat, although it is still high in calories, the flour-free version is slightly healthier.
The ingredients you will need to prepare are:
For the crust
16 egg whites 16 spoons of sugar 480 grams of ground walnuts
For filling
16 egg yolks 16 tablespoons of sugar 1 bag of vanilla sugar 1 tablespoon of water 200 grams of chocolate 250 grams of margarine (butter)
Preparation procedure:
From the listed ingredients for the crusts, you will prepare three equal ones. So, for the first crust, beat 4 egg whites with 4 tablespoons of sugar until stiff. When you turn the bowl and the egg whites do not move, it means that they are well beaten. Then add 120 grams of ground walnuts to them, and slowly, with the help of a spoon, stir to combine the mixture.
Mix slowly so that the egg white does not subside, but so that it remains airy, as this will later help the crust to be airy and soft. Therefore, pour the resulting mixture onto a pan lined with baking paper, and bake at 200 degrees for about 10-15 minutes. *It would be best if the pan were 28 cm in size.
Remove the finished crust from the pan, and bake the next two in the same way. Leave the finished crusts out of the oven to cool, and in the meantime prepare the filling.
Beat the egg yolks with sugar, vanilla sugar and water until foamy, so that they double in size. Add the chocolate to the beaten egg yolks, then put the egg yolks to steam.
Stir non-stop in order to cover it evenly, and so that the filling becomes nicely creamy. When you judge that the filling has been well cooked, remove it from the steam and wait for it to cool down a bit. Add margarine or butter to the cooled filling, then beat well with a mixer to combine and make a creamy filling without lumps.
Now fill the crust with the obtained filling, then decorate the cake according to your taste. Put it in the fridge for a couple of hours, so that it hardens and softens before serving.
…And, let’s just say that would be it. There are many more versions, and each one has its own. That’s why we say that you can adjust the ingredients according to your taste. Try the original recipes first, and then, depending on what you didn’t like, do it according to your taste next time.
You will see that the reform cake is a very rewarding treat, because it is relatively easy and quick to prepare, and it is generous and has a very rich taste, so one piece is quite enough. Therefore, you can prepare it for celebrations, birthdays and the like. Of course, you can always prepare it when you feel like eating something very delicious!
